You hear a lot of talk about “Meatless Monday” on social media. Here’s a different recipe that is plant-based and might inspire you to branch out and go meatless on your Monday … maybe for the first time ever. This recipe is affordable, quick, and so easy that you probably already have all the ingredients in your kitchen now.
1 cup rolled oats
Half of a bag of frozen vegetables — your choice of blend
1 can of diced tomatoes
1 tsp. Tabasco sauce
1/2 tsp. powdered ginger
Put the oats in a bowl and cover with water. Microwave for 1.23 minutes. (Easy to remember — 1-2-3)
In a skillet lined with a thin layer of water or vegetable broth, steam-fry the frozen vegetables for about 5 minutes, or until heated through. You can add diced onion and mushrooms to the mix, or keep it simple with just the bag. Add the can of tomatoes and cover until all is thoroughly heated.
You can opt to season the blend to taste with Mrs. Dash and a squirt of lemon juice along with a handful of dried basil and a sprinkling of garlic powder.
When the vegetables are done, remove the oatmeal from the microwave and add the vegetable blend to it. Sprinkle powdered ginger and Tabasco sauce over the mixture and stir thoroughly. This makes one serving with just the one bowl of oatmeal, so make more oatmeal if needed to match the amount of stir fry — or keep the extra vegetables for lunch leftovers served over rice or baked potato tomorrow.
You can serve savory oatmeal along with a tossed salad for a totally different meal plan. I can guarantee you’ve never had oats spiced like this before! The flavor blend of ginger/Tabasco can be addicting if you like spicy food, creating an Asian sauce flavor. NOTE: The ginger/Tabasco is a finishing touch. If you don’t want the spice, then leave it off and top with another seasoning of your choice.
