Chocolate frosting from beans

IMG_1831This is lightning in a bottle … or frosting on your cake! Better than store-bought frosting and you won’t be able to tell the difference by taste. This cost me a grand total of 79 cents to make for the can of beans purchased. You can buy boxed packets of stevia for under $10. I use NuNaturals.

Chocolate Frosting from Beans

1 15 oz can black beans, drained and rinsed

1/3 cup unsweetened cocoa powder (more if you want a very rich, dark chocolate. Be careful though. Too much makes it too bitter.)

Powdered stevia 3 packets or more to taste

Maple syrup to taste

1 teaspoon of water (more if mixture is too dry)

2 teaspoons vanilla extract

Blend all in a high-speed blender or food processor. This is great on top of Happy Herbivore’s banana bread. (Here’s another version of that recipe.)

I also added chocolate baking chips (vegan) to the bread and I plan to serve with slices of pineapple. This could be a perfect New Year’s Day treat for you.

  1. Thank you, Debbie! I’ve been using cocoa powder, coconut milk, and chocolate chips for frosting, but this sounds even healthier! Sorry again I can’t make it to the gathering. We’re off to Arizona and then Florida in February. Couldn’t do that when I was teaching! Happy New Year!
